Colterris Cabernet Sauvignon displays aromatics of dark concentrated fruits like black current and ripe blackberry with subtle notes of cocoa, tobacco and dried rosemary in support. On the palate, the wine is layered and complex with robust fruitfulness, velvety smooth tannins and subtle savory notes held together with a juicy mid-palate and subtle acidity throughout.

Production Notes
Being that Cabernet Sauvignon is our most prolific planting, we have a lot of com-plexity arriving in the winery from the field, our goal is to capture the nuance of each site then blend those components into the best expression of Grand Valley Cabernet Sauvignon we can offer!
Winemaker Notes
Incredibly fruitful aromatics dominated by red and dark fruit notes balanced by just a subtle touch of cracked black pepper and mulling spice. On the palate notes of ripe raspberry and juicy fig give way to a touch of fresh tobacco in the finish.
Food Pairing Notes
Enjoy with hard, aged cheeses, roasted winter vegetables, pepper- crusted ahi tuna, smoked beef brisket, beef short ribs, blackberry cobbler or chocolate cupcakes!
