Fresh Braeburn apple and lemon custard flavors pour out of the glass with a touch of graham cracker, butterscotch and toasty oak in the background. Produced from the Wente clone of Chardonnay, this partial ML conversion wine strikes a balance of acid and richness offering a widely-appealing palate style.  Barrel fermenting a portion of this wine in new French oak barrels and another portion in stainless steel results in a smooth full bodied wine while preserving its aromatic brilliance.

Production Notes
70% of the Chardonnay used in this blend went through Malolactic conversion. This microbial process converts malic acid (think green apple acid) into lactic acid (think yogurt/dairy acid). This conversion generally softens the presence of acid and give a rounder/fuller sensation on the palate. The portion that didn’t go through ML had a brighter palate profile and a more citrus driven nose.
